Pork cheese is anything but cheese, as it is not extracted from cow’s milk and is not considered dairy. Its origin dates from the Middle Ages.

It is considered as aspic of meat made from the head of a calf or a pig; also called: head cheese.

What is pork cheese?

It is a sausage made with a pig’s head; however, the recipes change depending on the region where they are made, in some, they include another part of the animal’s body such as the leg or the heart, so their texture can also vary.

This peculiar food is eaten in the center of the country, the most common is to eat it in tortas with cheese. In the State of Mexico, it is made in greater quantity, since it is said that its true origin is found in that place, also most of the consumption occurs in Mexico.

The most common and traditional recipe is one where the meat is cooked with onion, garlic, salt, pepper, thyme, garlic, cloves, and marjoram. When the meat is cooked it separates from the bones and cooks again, this time with garlic, pepper, thyme, marjoram, cloves, oregano, and bay leaf.
