Mazatlan, Sinaloa.- The high temperatures registered in the municipality of Mazatlán are leading the cheese and milk producers to pay special attention to the handling of the products in order to avoid their rapid decomposition and to see their economy affected, said José Antonio Lizárraga Rivero .
The president of the Union of Cheesemakers of Southern Sinaloa explained that due to the drought and livestock mortality in the locality, the effect has been minimal since they are in an era of piojillo, where the manufacture of dairy products is lower compared to other stages of the year.
“It’s feeling very hot in terms of the products also from us, you see that they are fresh products of the day, that tends to ripen a bit more cheese, tend to grab a bit of acidity, we have to have very careful handling of the cheeses right now “.
Lizárraga Rivero said they expect a rebound in the marketing of cheese during the holiday period, which is when the passers-by demand more product in restaurants and hotels and the shops where the different varieties of cheese are distributed.
