The president of the Union of Cheesemakers of Southern Sinaloa explained that due to the drought and livestock mortality in the locality, the effect has been minimal since they are in an era of piojillo, where the manufacture of dairy products is lower compared to other stages of the year.
“It’s feeling very hot in terms of the products also from us, you see that they are fresh products of the day, that tends to ripen a bit more cheese, tend to grab a bit of acidity, we have to have very careful handling of the cheeses right now “.
