The Associazione Verace Pizza Napoletana seeks to protect the appellation of origin of Neapolitan pizza. In 1984, the most famous Italian pizzaiolos of the time met to dictate the rules of a perfect pizza. For this, they grant a certification to those restaurants that comply with the strict rules of an authentic Neapolitan pizza.
