Chayote cream soup: an easy and nutritious dish

Chayote is a super nutritious and very rich food. One of my favorite ways to prepare and eat it is in a delicious cream, it is always a success!

Ingredients

  • 2 tbsp butter
  • ¼ chopped onion
  • 1 clove garlic 
  • 2 peeled and cut chayotes
  • 1 cup whole milk
  • 1 cup evaporated milk
  • 1 branch of epazote
  • 1 fresh cilantro fist
  • Bay leaves
  • 1 cup corn
  • ¼ cup sliced ​​almond
  • Salt and pepper to taste

Preparation

Heat a tablespoon of butter in a pan. Put the onion into pieces, the clove of garlic, the chayote, the two milks, and the epazote. Stir and let cook until the chayote is smooth. 

Remove the epazote and pour the contents of the pan into a blender along with the cilantro. Blend at high speed. Heat another tablespoon of butter in a pot and pour the contents of the blender there, using a strainer. Use a wooden shovel to “squeeze out” the entire broth from the strainer. 

Add the bay leaves, corn, sliced ​​almonds and season with salt and pepper. Stir, let it cook for a couple of minutes and serve hot with a little more almond to decorate. 

In addition to fighting constipation, chayote is very good at preventing anemia. Give this nutritious food to your family in the form of an exquisite cream, they will love it!
