The first time I tried the tongue tacos I was a bit skeptical, I imagined a tacky and unpleasant texture … the opposite was true, they are delicious! If you haven’t tried them, give them a chance, I’m sure you’ll love them.
This steamed tongue recipe is super easy to prepare, the meat is very soft, it is easy to clean and the taste is unique!

- 1 beef tongue
- 4 garlic
- ½ onion
- 2 fat peppers
- 1 pinch of cumin
- 1 bay leaf
- 1 tablespoon chicken consommé
For the tacos:
- Green sauce
If you don’t have a steamer, you can use an express pot or a regular pot. The time will depend on the size of the language. If you use a regular pot it will take 50 to 60 minutes for every 450 grams; if you cook in a pressure cooker, it will take 10 to 15 minutes, for that same weight.
- PLACE the garlic, onion, salt, pepper, cumin, chicken soup, bay leaf, and water as far as the steamer indicates.
- ADD beef tongue and cook over medium-high heat for 3 hours.
- CLEAN the tongue, remove the first layer of skin (thick).
- PICK the tongue for tacos.
- SERVE the tongue with tortillas, green sauce to taste, onion and cilantro.
