Doña Vale or Valentina Hernandez, one of the protagonists in Street Food Latin Americaseries documentary Netflix on street food, is the owner of The Memelas Doña Vale, a business located in the Mercado Central de Abasto in the city of Oaxaca, capital of the state of Oaxaca, Mexico.

Doña Vale cooks up her signature Memelas at a small food stall located inside Mercado Central de Abastos, the largest market in the city. Without revealing her secret , Doña Vale told Street Food how she discovered her recipe for the sauce: Since she had no money at the start of her business, she began by picking up the dried chilies that were left lying around in the stall opposite.

“To be successful, I had to do something unique. In my mind, the previous memelas didn’t turn out good. She needed something else, something else special. She had ideas because there a man sold the dried chilies in front of her and when she picked up the chilies the chilies would remain. I said ‘well I need them, he doesn’t need them anymore. I pick them up, wash them well and use them ‘”
