In Mexico, there are 16  appellations of origin between food, beverages, and products made by hand. And what does it mean that a food or drink has a designation of origin? That can only be elaborated -and called that way- in the places where it is produced due to natural factors, special labor or pre-Hispanic tradition.

The denominations of origin are determined through a process of certification of the Federal Government and are registered in the Mexican Institute of Industrial Property (IMPI).

Here we present the 13 foods and drinks that have a denomination of origin in Mexico. In addition, there is also the Talavera of Puebla, the amber of Chiapas and the Olinalá woodwork.

Veracruz Coffee

The volcanic soil and humid climate provide Veracruz with perfect conditions for high-quality coffee. Here they have the tradition of fermenting coffee immediately after depulping, which provides high acidity and spice flavor.

Arroz de Morelos

The soil and climate of this entity, in combination with the genetic characteristics of its varieties, are the main factors that give identity to this rice, which competes in the large gourmet markets of the world.

On  February 16, 2012 , the Mexican authorities granted the  designation of origin  to the  rice of the state of Morelos  with the objective of protecting the plant, seed and grain of this cereal to strengthen its production, improve its commercialization and prevent piracy ( the  “Morelos type” rice  specifically, which does not count with the quality of the rice that is actually produced in the state).

Cacao de Grijalva

Tabasco is cacao producing state for hundreds of years, teamwork between nature and the human hand that has tamed the jungle.

It is evident that there is still a long way to go and that a strategy of defense and rescue of cocoa in Mexico is required. Therefore, Tabasco already presents itself as a tourist destination through the  Ruta del Cacao , where you can learn about the plant, it’s sowing, the natural spectacle of the three levels of a controlled forest, the trees that generate shade, the fragile ones cocoa trees in the gloom and the earth fertilized with their own leaves.

Chiapas Coffee

The temperature and soil of Chiapas gives your coffee especially acid flavors. The height at which the coffee plantations are located makes it be considered Arabica coffee, a type refined by the care that must be taken to obtain it.

Habanero Chile of the Yucatan Peninsula

Chili is practically a standard of Mexico. 50% of all the national production of habanero is in Yucatan, which is why it is used almost in all its typical dishes in some way.

Manchu Ataúlfo del Soconusco Chiapas

13 municipalities of Chiapas make up the Soconuso region, where the Ataúlfo mango is found, which is characterized by having almost 70% pulp, sweet flavor and a characteristic yellow.

Vanilla of Papantla

The Papantla region encompasses the states of Veracruz and Puebla, privileged places for the planting of the vanilla pod. From the vanilla, everything is taken care of, from the tip to the root, and this is how they obtain a concentrate, natural extract or powder.

Chile of Yahualica

This is, neither more nor less,  the famous tree chili, green when it is immature and bright red when it reaches maturity. It occurs in the state of Jalisco especially in the area of Los Altos, although it also covers two municipalities of Zacatecas.


It is a traditional alcoholic beverage from Sonora; It has been prepared in an artisanal way for more than 300 years. It is similar to tequila and mezcal, but it is produced specifically with the head of the Peaceful Agave, which occurs only in the town that gives it its name.


It is an alcoholic beverage that comes from the region of Uruapan,  Michoacán,  and is made with the fermentation and distillation of the sugarcane that grows at a high altitude – from 1600 to 3800 meters above sea level – and even more special, in the transition zone of Tierra Caliente and the Lacustre zone.


Until a few months ago, there were only nine states with a denomination of origin – among them, Oaxaca, the largest mezcal producer nationwide. However, the State of Mexico and Aguascalientes were added to the list and Morelos awaits his opportunity to have this distinction.


Dasiliryon Wheeleri is the name of a species of endemic maguey from Durango, Chihuahua, and Coahuila, states to which the designation of origin of Sotol belongs, an alcoholic beverage elaborated prehispanically by the Tarahumaras and Anazasis,  which also use it as a medicinal remedy and in its religious ceremonies.


This is the oldest denomination of origin in Mexico, with 44 years. The denomination has 181 municipalities in five states of the country; Jalisco has the total of its 121 registered municipalities. Tequila comes specifically from Agave Tequilana Weber Variety Azul and can only be picked in Jalisco, Nayarit, Guanajuato, Tamaulipas, and Michoacán.
